white chili


i'm obsessed with soups and chilis. here is one of my favorites, i make it all the time and seeing as my husband wants all of his food extra spicy and flavorful, i'm not shy about adding too much of the dumin and cilantro. mmm... :)


White Chili

1 T. vegetable oil
1 medium onion, chopped (I think the more onion, the better - chop the whole thing)
4 stalks of celery, chopped
1 lb. chikcen breast, cubed
2 cloves of garlic, minced
2 c. chicken broth (this is usually one full can)
2 15-oz. cans Northern White Beans, drained
1 8-oz. can diced green chilies
1 tsp. oregano
1 tsp. cumin
3-4 tsp. dried cilantro (I use 4 tsp. and then some...)
Salt and pepper, to taste

Saute onion, celery, garlic, and chicken in oil over medium heat. Add salt and pepper. Cook until chicken is done all the way through. Add remaining ingredients. Bring to boil and simmer 20 minutes to 1 hour. Top with grated cheese and sour cream; eat with Fritos or tortillas.
